Since the start of the new year i’ve been determined to eat healthy, and making better choices. Cutting down on fizzy pop (diet) and takeaways being the main culprits. I used to avoid breakfast like the plague, very rarely eating it, as I didn’t have time or just couldn’t be bothered. It got to the stage where I wasn’t even hungry any more, until around dinner time. Since changing my eating habits, breakfast has slowly become on of my favourite meals of the day. I discovered these Breakfast Baskets via Nouvelle Daily but they are featured all over the internet. They are so simple and easy yet incredibly delicious.
- 6 rashers of bacon.
- 4 eggs.
- Start by greasing your muffin tray with a little oil, preheating your oven to 180 degrees.
- Beat together the eggs.
- Cut each rasher of bacon in half, and line the muffin tray with the bacon to form a basket.
- Pour in the egg mixture about 3/4 full, as not to overflow the bacon, letting the eggs escape.
- Season each one with salt and pepper. Put in the oven and bake for about 15-20 minutes, until the eggs are golden and the bacon is cooked.
