slow cooker recipes

I have owned a slow cooker for quite a few years now, since moving out of my family home actually – I think my mum bought it for me. However I very rarely used it, maybe for the odd recipe here & there but I honestly didn’t see the fuss. It wasn’t until I joined Slimming World maybe three years ago that I started using it more often & trying new recipes, it opened my eyes to all the different things you can make in them!

Since having Teddy it has been a lifesaver! Especially recently where I find it hard to dedicate time to cooking & trying to keep a toddler entertained, everyday. Some days it is nice to prep everything in the morning, throw it in the slow cooker and let it do its thang’. I thought I would share our favourite slow cooker recipes that we enjoy altogether, as a family.

SLOW COOKER RECIPES

MINTED LAMB STEW

INGREDIENTS:

  • 1 boneless lamb shoulder/lamb leg steaks – diced
  • 1 white onion
  • 2 carrots – thinly sliced or diced
  • 1 cup of frozen garden peas
  • 3tbsp of mint sauce
  • 1tsp mixed herbs
  • 500ml lamb/veg stock – made with one stock cube
  • gravy granules – add 1tbsp at a time until you have your desired thickness.

COOK ON LOW FOR 6/7 HOURS.

CAMPFIRE STEW

INGREDIENTS:

  • 1 smoked gammon joint
  • 1 tin of chopped tomatoes
  • 1 tin of baked beans
  • 1 green pepper-sliced
  • 1 white onion- diced
  • 1 garlic cloves – crushed
  • 1tsp tomato puree
  • 1tbsp smoked paprika

COOK ON LOW FOR 6 HOURS.

CHICKEN PASTA BAKE

INGREDIENTS:

  • 3 chicken breast fillets
  • 1 onion
  • 2 crushed garlic cloves
  • 1 jar of tomato pasta sauce or 500ml of passata.
  • handful of sliced mushrooms
  • half tsp dried oregano
  • half tsp dried thyme

COVER & COOK ON HIGH FOR FOUR HOURS. ONCE COOKING TIME IS DONE, SHRED CHICKEN WITH TWO FORKS. SPRINKLE OVER PARMESAN CHEESE. ADD COOKED PASTA & MIX UNTIL EVERYTHING IS COMBINED.

DONOR KEBAB

INGREDIENTS:

  • 500G lamb mince
  • 1tsp salt
  • 1.5tsp cayenne pepper
  • 1.5tsp garlic powder
  • pepper to season
  • 1tsp oregano
  • 1tsp mixed herbs
  • salad to serve – lettuce, onion, cucumber, tomatoes.
  • pitta

MIX ALL THE SPICES & HERBS TOGETHER IN A BOWL. ADD IN MINCE AND MIX WELL. ONCE ALL THE INGREDIENTS ARE COMBINED, ROLL THE MIXTURE INTO A LOAF SHAPE. PUT THE LOAF IN THE SLOW COOKER FOR 6 HOURS ON A LOW HEAT. ONCE IT HAS FINISHED, REMOVE FROM SLOW COOKER & WRAP IN TIN FOIL FOR 10 MINUTES.

    Great post and I can say our slow cooker has been on overdrive these past few weeks. Love the fact you can come home from work and food is ready 😍. I will be giving some of your recipe ideas a go. The camp fire stew looks tasty.
